Company for Dinner


It rained a little but company came anyway.  It was so good to see everyone.  And they are fun to cook for.  One is a vegetarian so two vegetable dishes were planned in addition to desserts and sauces.  I did my shopping at Seaside Market in Encinitas.  It is smaller than a supermarket and a little farther away from my usual grocery source but always they have a great selection. 

Dessert was especially important.  Isn't it alway?  I planned an Apple Pie with Fireball Cinnamon Whiskey Sauce and a cake I had made before.  The recipe for the cake came from a catalog I get in the mail- King Arthur Four recipes.  The first time I made the cake it turned out beautifully. 

I had full confidence it would look like this again.  But alas, it came out of the pan in crumbs.  The crumbs tasted good but there was no way I could serve this.  So I made a Chocolate Cake instead.  
I served it with Whipped Cream and crumbled Almond cookies from a package.  I have to say there wasn't a crumb left behind.  

I also made an Apple Pie with Fireball Whiskey Caramel Sauce.  

Fireball Whiskey Caramel Sauce

1 c. sugar
1/4 cup water
1/2 cup heavy cream
1/2 cup butter
1/3 cup Fireball Whiskey
1/8 tsp salt
1/4 tsp nutmeg
1 large egg
1/2 cup sugar
Whisk together sugar and water- cook over medium heat stirring constantly for 3 minutes.  Cook an additiional 8 minutes without stirring until mixture is amber in color.  Remove from heat.  Cool one minute.  Stir in cream, butter, Firball whiskey, salt and nutmeg.whisking until smooth.  Combine egg and sugar.  Return pan to stove.  Cook over medium heat an additional 2-3 minutes.  

The desserts were made a day ahead as well as dough for rolls made from a recipe for my bread machine.  I used a bread recipe with cashews chopped up and seasonings.  But instead of making it as a loaf of bread, I made it into small rolls and baked them in the oven.  

The main course was a Cajun Chicken.  Since I had a vegitarian teen coming, I also made 2 vegetable dishes and rice cooked in Vegitable broth.  I think everyone enjoyed the meal.
